5 Treats for the Diabetics

Let’s face the paradox , it’s festivities all around and few of us are barred from eating the most scrumptious desserts. Not fair! To make sweet-toothed people suffering from diabetes a little better, the world is celebrating WORLD DIABETES MONTH to raise awareness as well as inspire people to lead a healthier life and I am here to make your sweet-craving souls do a quick somersault.

  1. DATE-AND-NUT ROLLS

  1. Balls packed with nutrients and energy, the date and nut rolls are quick and easy to make and perfect to pop in your mouth anytime. You’ll require:
  • Dry nuts (cashews, almonds, walnuts, or any of your choice)
  • Dates
  • Desiccated coconut 

    Knead the dates, roast the nuts and mix them well. Make small balls and roll them in desiccated coconut. Keep popping!

 

2. PEANUT BUTTER GRANOLA COOKIE

Stuffed with mouth-watering nutrients, these cookies will leave you energetic. You’ll require the following for this desserty-snack:

  • 6 pieces dates
  • 1/4 cup maple syrup (optional)
  • 1/4th cup natural salted peanut butter
  • 1 cup roasted almonds (chopped)
  • 1 1/2 cup rolled and toasted oats
  • Optional: sugar-free chocolate, vanilla

Warm and knead dates, until soft. Warm maple syrup and peanut butter and pour the liquid in the mixture of oats, almonds and chocolate. Once mixed, transfer in a tray (properly greased) and spread evenly. Cover with a plastic wrap and allow it to set in a freezer for half an hour. Cut in small squares and relish.

 

3. FROZEN FRUIT POPS

These babies are bright, tasty and fruitilious. We bet you’ll ask for more. For these popsicles, you’ll need:

  • 2 cups of fruit (Pick your favourite)
  • 1/4th cupWater
  • a pinch of salt

Blend fruit, water and a pinch of salt and strain. Pour the juice and a few fruit pieces finely diced in a popsicle mould and put it in the freezer for a few hours. Run under warm water to pop out the popsicle. Slurp!

(Alternatively, you can also use yogurt instead of water, to make the fruit popsicles more interesting)

 

4. BERRY-COCONUT YOGURT PARFAIT

Darn! This dessert is delicious and we guarantee people would give up their sugared desserts for this healthier and tastier one! All you need is:

  • Vanilla flavouring
  • 500 ml Coconut Milk Yogurt (prepare in the same way as dairy yogurt)
  • 1 cup Yogurt
  • 4-6 strawberries
  • 2-3 Raspberries/ Blueberries
  • 1 tbsp Chia seeds
  • Your favourite nuts

Stir chia seeds and coconut milk yogurt. Slice strawberries as you like. Now layer in the order: Yogurt, strawberry slices, blueberries, nuts, repeat. Serve in a bottle jar.

 

5. CLASSIC BISCUITS

We do crave for some tea-time biscuits and stop from those available in the market, thanks to the high sugar content. All problems solved, follow along:

  • 1 3/4 cups flour
  • 2 1/2 tsp baking powder
  • 3/4 tsp salt
  • 150 ml water
  • 2 tbsp apply juice
  • 3 1/2 tbsp vegetable oil

Preheat oven to 230 degrees. Filter baking soda, flour and salt properly and pour in the mixture of well-blended apple juice and vegetable oil. Knead the dough and roll into the biscuits of the desired shape. Bake until light brown.
